I love tabbouleh!
The fresh parsley, the fresh lemon juice, the tomatoes, onions, and olive oil, the couscous – heck no!
Now anyone who is wheat-free can still have their tabbouleh and eat it too!
Last year when I was on a raw fruits and veggie diet, I ate tabbouleh by the bucketful by using cauliflower instead of couscous.
I would take a 1/4 head of raw cauliflower, whip it in the food processor until it was grainy and voilà!
Tabbouleh that looks and tastes like the real thing.
To the grocery store I go!
