Every morning I have a pro-biotic made with fermented milk which contains 50 billion bacteria to help heal my gut and intestines. I can’t stomach food first thing so I eat about 1 1/2 hours after rising. During the week, I eat raw nuts for breakfast. On weekends, scrambled eggs with smoked salmon and fresh tomatoe or cucumber.
Lunch is either a home made greek salad made with fresh cucumbers, tomatoes, kalamata olives, feta cheese, pine nuts, lemon juice, olive oil and greek seasonings. Or lunch can be smoked salmon slices wrapped around finger sized pieces of cream cheese with either cucumber or tomatoes. Or, tomatoe slices with sliced goat cheese topped with kalamata olives.
Dinner is either steamed salmon with some sort of veggies, or scrambled eggs with veggies, or an omelet with veggies. I like steamed brussel sprouts with garlic and butter, or steamed asparagus, or sautéed onions and mushrooms with some other vegetables like steamed cauliflower and broccoli.
I’ll also eat many different cheeses, avocados, sweet potatoes, nuts and 75% dark chocolate (but very occasionally).
I don’t miss the Timbits, or bread or any other foods that I used to consume constantly. I am currently weaning off coffee (again) due to its cross contamination with wheat, much like oats (unless certified as gluten free).
I am eating quite healthily and I haven’t replaced the junk food I used to eat with gluten-free junk food either. I don’t see a need for that to be honest.
I feel very satiated, I don’t get hungry soon after eating and I feel great.
